Cocktail Hour: Pineapple Punch

If there’s one thing I love about summer, it’s the excuse to sit outside with a tropical cocktail in hand — and it’s especially fun with a few colorful outdoor linens to liven up an otherwise humdrum patio, like this indoor/outdoor tablecloth and these punchy napkins from JCPenney’s summer collection. They’re the perfect complement to a pineapple-based drink for a sweltering summer day. Read on for the recipe!

Cocktail Hour: Pineapple Punch

Ingredients:

  • 1.5 ounces of white rum
  • 2 ounces of pineapple juice
  • .5 ounces of orange juice
  • sprig of mint
  • a few dashes of Bittermens ‘Elemakule Tiki Cocktail Bitters (perfect for any Tiki drink, really)
  • squeeze of lime

Cocktail Hour: Pineapple Punch

Directions:

  • Put all ingredients in a cocktail shaker filled with ice
  • Shake vigorously
  • Pour over ice (preferably an oversize cube or pineapple-shaped ice if you’re feeling fancy)
  • Garnish with blueberries speared by a pineapple frond and a wedge of pineapple

Every Christmas season, I realize how out of practice I am with handwriting the moment I start signing cards and addressing envelopes. A bar cart has been at the top of my must-have list for a couple of years now, but I can’t bring myself to actually ask Santa for one — they’re so expensive! However, that hasn’t stopped me from adding plenty of mixology accessories to my wish list this year. I’m all about this pineapple ice bucket, a decanter that looks more expensive than it is, and these quirky cocktail napkins. I’d also love to add this koi vase to display cocktail stirrers.

Over the weekend, we drove to Michigan and welcome Over the weekend, we drove to Michigan and welcomed this little lady to the family! She’s a two-year old snow Bengal that was surrendered after being bullied by the other cats in her home. We’re pretty sure she’s a seal lynx point Bengal, which has Siamese in the lineage, based on her vibrant, slightly crossed blue eyes. She is the sweetest, softest, most playful, and unbelievably talkative little girl. We’re crazy about her! 

We haven’t picked a name just yet, though. We have some ideas, but we’re waiting to get to know her personality more. 😊

I made @csaffitz’s raspberry almond thumbprint c I made @csaffitz’s raspberry almond thumbprint cookies and they’re delicious, but a lot of work and they don’t hold up well. If you’re planning on them this year, don’t add the jam dollop until just before you’re ready to serve them. The moisture gets sucked in overnight. Still good, of course, just softer than the first day.
