Recipe: The Absolute Best Frosted Sugar Cookies

December 22, 2020 by jessica Leave a Comment

Frosted Sugar Cookie Recipe

It never feels like Christmas until I’ve had my mom’s sugar cookies. In a typical year (or even an atypical one like 2020!), I’ll spend a couple of days working on these — baking them the first and decorating them the second — and it immediately puts me in the holiday spirit. Not only are these nostalgic for me as she’s been making them my entire life (there’s even a photo of me, no older than 2 years old, sitting at the kitchen table “helping” with them), they’re hands-down the best sugar cookies I have ever had. And plenty of people agree with not-so-subtle hints to make them each year. So, as my holiday gift to you, enjoy my favorite family recipe. 🙂

If you make them, please let me know what you thought and tag me in any photos! And please don’t hesitate to send me a DM on Instagram or leave a comment here if you have questions.

SUGAR COOKIES

Ingredients:

  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 cup butter (softened to room temperature)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup sugar

Instructions:
(yields 4-5 dozen, depending on cookie cutter size)

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Sift flour, baking powder, baking soda, and salt together.
  3. Cut butter into the flour mixture. (I use a pastry cutter.)
  4. In a separate bowl, combine the eggs, vanilla, and sugar.
  5. Add the egg mixture to the dry ingredients. (While this probably isn’t the best way to do it, I’ve always used a electric hand mixer to incorporate the ingredients and then I use my hands to bring it together into a ball.)
  6. Working in small batches, roll out dough on a floured surface sprinkled with a 50/50 mixture of flour and sugar. (I do a half cup of each in a bowl nearby to sprinkle on top of the dough, my rolling pin, and the cookie cutters to keep everything from sticking.)
  7. Bake for 9-12 minutes, or until the edges are golden brown. (I used this highly rated cookie sheet this year. By the time I was on my last batch and the sheet is piping hot, I’ve reduced the cooking time to about 8 minutes. If you prefer to chill your dough, adjust your cooking times accordingly.)
  8. Cool on a wire rack.

VANILLA FROSTING

Ingredients:

  • 2-4 cups of powdered sugar
  • 2 tbs butter (softened to room temperature)
  • 1/2 tsp vanilla
  • splash of milk (or a dairy-free alternative)

Instructions:

Fair warning, this is going to be one of those annoying, adjust-it-as-you-go endeavors rather than being a hard-and-fast recipe. I didn’t have any milk in the fridge this year and used almond milk, which turned out fine and didn’t affect the color or flavor of the frosting.

  1. Start with approximately 2 cups of powdered sugar in a bowl.
  2. Add 2 tbs soft butter and 1/2 tsp vanilla.
  3. Pour in a touch of milk (just a little at a time).
  4. Stir together by hand. You’ll want the consistency to be thick but still spreadable. If it seems too thick, add some milk. If it’s too thin, go ahead and add more powdered sugar. I tend to add an additional cup of powdered sugar.
  5. When you’re frosting your cookies, work in batches between frosting and decorating. The frosting will never get hard per se, but it will stiffen up where the sprinkles will no longer stick.
  6. Let your cookies sit out until the frosting is hard and then store them in an airtight container.

SWEET SUMMER

July 2, 2014 by jessica Leave a Comment

image

Unfortunately it has become evident that weekends of beer and pizza crept up on me—and spending Sundays in sweatpants gives me a false sense of security that my clothes fit juuuust fine. In any case, I’m back on the Weight Watchers bandwagon, counting points and spending my evenings with Jillian Michaels. I’ve set a goal to lose 10 pounds by the time we leave for Belgium next month and an opportunity to partner with Kohl’s on a wellness post was the extra motivation I needed to begin making healthier choices.

image

I really wanted to purchase a Fitbit (David Sedaris has one, after all) to keep track of my activity and sleep patterns, but the gadget was sold out at every nearby store. I opted for the next best thing: one heck of a blender for making smoothies. This thing crushes ice like no other (a far cry from the blender I already owned that barely nicked a cube) and makes smoothies in a snap. The ingredients for this blueberry smoothie are below and you can head on over to Pinterest for more healthy smoothie recipes (and a few indulgent options for those splurge days).

INGREDIENTS

1 cup blueberries
1 large banana
1 tablespoon flax seed
handful of spinach
1/2 cup almond milk
1/4 water
3 or 4 ice cubes
a sprig of mint for garnish, if desired

Bon Appetit

I often struggle to find appealing summer recipes that don’t require an oven, but I knew this recipe would be a favorite the moment I stumbled across it. It’s a delicious way to incorporate summer produce into a meal that takes minutes to create.

Tip: create uniform slices by using a mandoline, like this one.

Sipping: Strawberry-Infused Vodka

June 14, 2012 by jessica Leave a Comment

Making infused vodka had been on our summer to-do list for over a year and I’m not really sure why we dawdled for so long. (Maybe I’m just too impatient for a cocktail?) It was incredibly easy and well worth the wait.

Here’s what you need to do:

  1. Fill a large Mason jar with your berry of choice (other fruits and peppers will also work). Make sure it’s ripe and take off any part of the fruit you wouldn’t normally eat (pits, stems, etc.).
  2. Add vodka (or gin or clear rum or whatever else your heart desires). We used Tito’s vodka.
  3. Seal it and stick it in the fridge for a couple of weeks. We shook ours every few days to mix it.
  4. Give it a taste. If you like the intensity, strain it and store in the fridge.
  5. Enjoy!

We kept it simple and mixed our concoction with 7Up. The lemon-lime soda added sweetness to the infused vodka without overshadowing the strawberry flavor. Next up: Blackberry vodka? Jalapeno tequila? Cherry rum?

I am just the happiest! I keep looking at this bat I am just the happiest! I keep looking at this bathroom and thinking how lucky we are that we were able to do this! It wasn’t always easy to navigate the stressful moments, but the end result is worth it. I feel like I’m at a luxury hotel every time I shower! (And it sure beats showering with the spiders in our [basically unfinished] basement bathroom. It was like camping in our own home for the past six weeks — and I very much hate camping!)

So long, farewell, auf Wiedersehen, goodbye ... to So long, farewell, auf Wiedersehen, goodbye ... to this bathroom. Demolition on our upstairs main bathroom starts today! I love old houses and #OldHouseThings, but this bathroom's prior renovation clearly isn't part of the original home -- nor was it done well. A leak from the bathtub into our kitchen on Easter 2020 kicked off our plans for the renovation and it's finally coming to fruition two years later. The prior damage wasn't caused by leaking pipes (although we just replaced all of the old galvanized pipes with PVC plumbing to futureproof the house); it was from water pooling on the edge of the tub after a shower and then spilling over the side onto the floor. As we discovered, the tub isn't level (nor is the toilet) which caused water to flow over. I'm sure we'll discover plenty of other water damage as our contractor's team starts pulling everything out and I'm so excited for the peace of mind that will come from getting everything in tip top shape.

Today is also the day that fixtures will be installed in the half bath! There's a short punch list of small things yet to do in that space, but the finished product is right around the corner!
